The point of this website is to show people that cooking real food doesn’t need to be difficult or take hours and that virtually anybody can learn to do it. That being said, the majority of my cooking is far more complex than what I share here. Preparations like this one keep me grounded and remind me, without a shadow of a doubt, that more work doesn’t alway make something better. In fact, many of my favourite chefs say something to the effect of “nature gives us flavourful foods and our job as cooks is to not screw them up.”
Feel free to substitute another Ocean Wise fish for the cod and adjust the cooking time accordingly. If you don’t mind sugar, put a tablespoon in the marinade. It’ll add a nice depth to the flavour and the small amount actually consumed will make next to no difference nutritionally.
Time: 15 minutes (plus marinating time)

Ingredients:
¼ cup sake ¼ cup miso paste 1 tablespoon soy sauce 4 4-ounce portions boneless codPreparation:
Combine the sake, miso and soy sauce. Place the cod in a zipper seal bag and pour in the marinade. Remove as much air from the bag as possible, seal and refrigerate for thirty to sixty minutes.
Preheat your broiler on high. Place the cod on a rack with a pan underneath and broil for approximately ten minutes or until cooked through.
Serve immediately.
