There are few things more satisfying to a cook or diner than a silky smooth puree. I made this in a Blendtec blender and if you have a Vitamix, it will produce an equally fine result. If you haven’t got a high-powered blender, you can use a food processor, though the texture won’t be quite as smooth.
I went with the classic combination of yam and cinnamon, adding a touch of cayenne to keep things from getting cloyingly sweet. Feel free to experiment with spices to make this recipe your own. Allspice or clove would be a great starting point.
The puree is pictured under a pan-seared pork chop, though nearly any protein would go well with it.
