It’s the perfect refreshment for a hot day and will make an excellent between-course palate cleanser for that big dinner you’ve been planning. Keep the concept and ratios the same, but have some fun changing ingredients. Watermelon with mint rather than basil is an obvious choice and you could try keeping the basil, but substituting balsamic vinegar for some or all of the lemon juice. Those are a couple of the experiments I’ll be sure to conduct, though I’m sure you can come up with plenty more!
Time: 10 minutes (plus freezing time)
Serves: 6
Ingredients:
1kg watermelon – cubed
50g honey
30g fresh lemon juice
5g fresh basil leaves
Preparation:
Place all ingredients in a blender jar and blend until smooth.
Pour into a high-sided pan and place in freezer until completely frozen.
Use a fork to scrape the watermelon crystals into bowls, serving immediately.
