Something this simple is hardly a recipe, yet I had to share because it’s just that darn good! Make this and put it on something. I happened to use a sous vide, grass-fed ribeye. It was a fine choice.

Serves: 4
Ingredients:
200g tomato – seeded – small dice
50g white onion – small dice
20g fresh lime juice
10g cilantro – finely chopped
5g garlic – finely chopped
2g kosher salt
Preparation:
Combine all ingredients, cover and refrigerate for fifteen minutes.
Serve immediately or keep refrigerated for up to two days.
