Jars of these olives make great gifts and this post is just in time for Christmas. The garlic, parsley and citrus flavour combo of gremolata may mean you won’t want to give them away though.

Serves: 6
Ingredients:
140g extra-virgin olive oil
5g flat-leaf parsley – finely chopped
4 cloves garlic – finely chopped
Zest of one lemon
Zest of one large orange
300g mixed olives with pits – drained weight
Preparation:
Place all ingredients except olives in a 500ml mason jar. Cover and shake.
Add olives to the jar. Cover and shake gently.
Refrigerate for one week. Serve or refrigerate for up one month.
