It’s great to have lean protein options handy and this fits the bill perfectly. You could use turkey or pork in place of the chicken. Working with the texture of ground poultry isn’t the most appealing thing in the world, but the result is well worth it.

2.2kg ground chicken breast
20g fresh garlic – finely chopped or grated
6g ground sage
5g fresh ground black pepper
4g ground ginger
Place all ingredients in the bowl of a stand mixer and mix on medium speed for two minutes.
Form into patties or portion to pan-fry crumbled.
